Renee’s Recipe
For the cheese spread topping
1/4 cup of ricotta cheese
1/2 cup of cottage cheese
Juice of 1/2 lemon
1 garlic glove
Mix all ingredients in a blender or food processor.
Put in refrigerator while you cook the tomatoes
1 cup of small tomatos of your choice
Drizzle with olive oil ( 1 to 2 teaspoons)
1 teaspoon of salt
Roast in oven at oven at 350 for about 30 minutes.
Once the tomatoes are done:.
Put on a plate
Top with cheese spread
And drizzle with your favorite balsamic vinegar
Serve with sliced toasted sourdough baguette or your favorite bread.
